Food is one of the basic necessities of life. Make it more exciting and appetizing by trying new dishes.From soups, appetizers and desserts,Antique is very famous in making delicious and unique flavors doing it with it’s tradition and in cultural ways. In Callan, Sebaste you can try their “Binakol” which is made of chicken with coconut juice for its soup and coconut meat other Callananons put papaya and leaves of chili (dahon ka katumbal) .It can be cooked in different ways, some other people use pot and others use Kawayan (or a bamboo) where they believe that the bamboo give a more flavorful soup.



There is a resort in Callan,the Anya’s Burubangled mountain resort who serves the most savoury “Binakol” they are cooking the chicken Binakol using a pot and the buko juice is freshly picked from their coconut tree. Usually, Binakol has its different ways to cook but the said resort are using Native chicken from their farm and if you want to put vegetables then you can request to add papaya and malumggay or leaves of chili. Using the “sabaw Kang butong”as it’s main soup which makes it more attractive to everyone . It is very unique since Antiqueños are only familiar with common adobo,curry,afritada and tinola dishes but without them knowing that in Callan they are serving hot savoury chicken Binakol soup everyday. It is served freshly and steaming in the heat.


To those who’s curious why it’s called “Binakol” well Callananons says “ ibakulon ang Manok antis rahaon” or you need to flog the chicken before you cook because by doing that it makes the soup more flavorful. But others may tell that it’s called Binakol because native people doesn’t know how to write and read and the first word that came out from their mouth is bakol and as years go by people improves its name to Binakol.


Preparing Chicken Binakol is very similar to Chicken tinola, you just put some ginger,onions,garlic ,chicken but what makes it different is you don’t put water rather put coconut juice and meat to make the soups flavor unique and different and after adding everything from aromatics to meat ,you need to boil it until the meat is tender and it’s in the tradition that you need to make the soup let it’s “mantika” oil of the chicken came out,and by doing that tradition it is a 100% sure that the soup is very tasty.


In conclusion, Cooking unique soups such as Binakol can promote the tradition way of cooking of Callananons .It is not only to make Callan familiar to Antiqueños but also it helps to promote the local dishes and the exact attractions where you can enjoy your escapades,This is not only tasting unique foods but also sharing history and stories.
